Steak 101 Registration

Steak 101 is primarily held outdoors, while it is under cover and we hold it rain or shine, no one wants to be outside for two hours at 3o degrees with a north wind gusting through our patio.  So, our classes in December through February are typically posted short notice.  Once we see the forecast lends for favorable weather for a Saturday, we’ll shoot out an email and post on Facebook that we will hold a class.  So, like us on Facebook and be on the lookout!  We resume a normal full slate of classes in March!

Do you love steak but don’t know where to start in picking or grilling them? Or you just need to refine your skills or know someone who needs a grilling education. The leader in locally raised premium beef has a solution for you!

In this 2 and a half hour crash course, Local Yocal’s owner, Matt Hamilton will educate you on all things concerning steak! They will teach you the many steak cuts available and clear the fog of marketing confusion by discussing meat grading standards, and the real meaning behind “Natural”, “All Natural”, “Grass Fed”, “Certified Angus” and several other marketing terms. The second part of the class will take place right in the butcher’s cutting room, where you will learn where on the actual beef carcass different steak cuts originate before watching the butcher make the actual cuts.

The class will conclude with a discussion of different cooking techniques, a grilling demonstration and sampling.


Generally most Saturdays in March through mid-November.  We take August off due to the sweltering summer heat and start back up in mid-September.   Classes are opened up on scheduler about 4 to 6 weeks in advance, so just continue to check back with us if you would like to enroll during a month not yet posted.  We do occasionally hold classes in the “off” months if the weather is favorable, the best way to stay tuned to class offerings is to follow us on Facebook.


Class is approximately 2 and a half hours (sometimes up to 3 for an extra inquisitive group).  The first and last part of class is held outdoors under our covered portico and we provide fans and seating, but it can still be rather warm.  The middle part of the class is held inside our cutting room, which is kept at approximately 45 degrees.  We turn off the refrigeration unit fans during class to increase the comfort level.  You may wish to bring a light jacket, but most people find that portion of the class to be a nice reprieve from the heat.


To participate in the butcher’s room portion, students must wear closed toe, non-slip shoes (heels, slick or leather soles will absolutely not be allowed), and long hair must be pulled back.


Regular cost of Steak 101 is $40.  Payment is not made online, please be prepared to pay the day of or when you are shopping with us between now and then.  If you purchased a voucher via AmazonLocal, Living Social or Groupon, please present it on the day of class.


We are glad to reschedule you for another class, but please provide at least two days notice. A $15 rescheduling fee applies if you do not adhere to this policy and no shows will result in forfeiture of fee or voucher.       While it’s definitely geared for adults, our classes are open to children. There isn’t a minimum age requirement.

    First off, holy cow your BBQ sauce and bristick yesterday made me the happiest woman alive for the less that five minutes it took for me to inhale it. I’ve had a lot of really crappy brisket and sauce lately and I was over the moon for ya’lls stuff.

    Now for business. I went to sign up myself and husband for Steak 101 and the groupon scheduler doesn’t show any upcoming dates. Are ya’ll still offering the class or am I’m technologically disinclined? I’d like to make it a Christmas gift but come out in January when it’s not so hectoc with all the holiday stuff.

      Sorry for delayed reply — we got crazy busy with the holidays! Glad you enjoyed the BBQ brisket!! We have scheduled a Steak 101 class for Saturday, Jan. 18, in case you’re still interested. Classes should be back to a weekly (Saturdays) schedule by March. Thanks again!

      The forecast looks pretty good, so we have scheduled a class next Saturday, January 18, at 1pm. Don’t panic if you can’t make that one though — we’ll honor Living Social vouchers for up to a year after date of purchase. We plan to be back to our weekly schedule of classes sometime in March, weather permitting. Thanks for your interest!

    I was looking at buying the living social certificate but it looks like it expires June 7th and from what I read above classes are held in June/July. Is that right?

      We’ll be scheduling regular classes when the weather warms up, probably in March. Till then it’s a bit sporadic/spontaneous depending on weather. The forecast is looking good for next weekend, so we have scheduled a class for next Saturday, January 18, at 1pm. We will honor Living Social vouchers for a year from date of purchase.       Our first class for 2014 has been scheduled for next Saturday, January 18. Don’t panic about the LivingSocial deal however, we will honor your vouchers beyond the expiration date (within a year of purchase).

    I just want to confirm, that despite the expiration date noted on my Amazon Local coupon, you will honor the voucher for up to 1 year. My voucher expires on 1/20/14, however, so far there has only been one class which is sold out.

    I just wanted to leave a comment about how much my wife and I enjoyed this steak class. We went to it last year and had a blast! 3 hours of getting our food smarts on, and you get to eat steak while you’re t it…. Not too shabby! We’re thinking about taking another one this year :)

    question: i see you arent having any classes until march…do you ever do any classes if we have a group of about 10-12 that would like to come. We arent looking for a private party but have friends coming in town and this class is a great experience in Dallas….just wanted to check.

      We do have a class scheduled this Saturday, Jan 25, as well as March 8. At this time of year, we have to keep an eye on the weather, so there’s not much advance notice unfortunately. From the springtime on in March, we plan to have classes 3 Saturdays per month. For a group of over 10, it may not be a bad idea to book a private class though… let us know if you’d like more details about that!

          Private classes can be booked for $400, for up to 35 people. Public price is $40/person for the class, so you can see it saves quite a bit if you can get more than 10 people together!
