Skirt Steak is a long, flat cut that is prized for its flavor rather than tenderness. To minimize their toughness skirt steaks are either grilled or pan-seared very quickly or cooked very slowly, typically braised.
Our cattle are raised in a sustainable manner and in their most natural setting – on pasture – in the open air and sunshine free from growth stimulants and antibiotics.We truly see that we have “happy cattle.” To us, “happy cattle” is not a marketing scheme; it’s our reality. As a result, our herd is far healthier than their feedlot raised counterparts, both for you and for them. Their diet is 95% grass based. The primary ration is comprised of fresh grass and high quality hay, and a small legume based (rather than grain) ration is supplemented to increase protein intake.
