Our Story
The road that led to the “Local Yocal”:
Matt jumped ship from his steady income in April 2009 to start Genesis Beef. He grew up farming, ranching and being involved and many facets of agriculture; so starting a beef company was not a completely blind venture. The biggest hurdle before us was the limited supply of processing facilities that had the proper level of licensing to enable us to resell our product. Once we connected with facilities with the proper licensing, customer service was the next issue. The few available to us were so backlogged with business that ours had very little value. Our processing was either done their way or no way, no exception. After we butchered our first set of steers we instantly knew that the next step in our business had to be getting our processing in our own hands, we just weren’t satisfied with the quality and service out there.
And that’s where the dream of what is now Local Yocal began…
Our first and foremost desire was to provide a much needed facility to serve the growing number of small producers. Quality grass-fed beef cannot be produced on a large industrial scale and in order to meet the growing demand for the product small producers need the means to be successful, and processing is a large factor. We want to encourage camaraderie amongst producers – to work together to see the industry grow.
In addition to providing quality processing, our desire was to be able to serve FRESH grass-fed beef to consumers.
Processing + fresh meat = traditional butcher shop.
Then…
Out at Farmer’s Markets over the last year, we met so many great families producing wonderful products. From there our vision of the retail side of the store continued to grow, centered around the intention to have a face and a story behind all the products in our store.
So here we are today!
We are finally open, available to small producers as a quality processing facility, equipped with deli cases stocked with fresh grass-fed beef and a retail front with a handful of very high quality products, all from folks we know (with very few exceptions)!
Local Yocal is a true “mom & pop” shop with heart, soul and passion behind what we are doing. We did not just jump on the bandwagon of selling people “natural” and “organic” stuff. Both of us having Ag backgrounds, we became very skeptical of those labels when so many large companies jumped on board. We decided we wanted more confidence in knowing what we were really buying and consuming, so we took production into our own hands, and that passion is what lies behind what we are bringing to our store and your families!
I met you at the Keller Farmer’s Market and I am so excited that you now have a store! I don’t know when I will get out to McKinney but I know my husband is in that area quite a bit for work and he has promised to stop in and get us some all natural goodness!
On another note I teach AP Environmental Science in Fort Worth and I recently gave my students an assignment where they had a grocery list and had to price organic and all natural foods versus our typical non-organic, mass produced foods. The difference in price came out to about $15.00 and they were so shocked that the cost of buying eco-friendly was really not that much. We are starting an organic farm on campus and intend to supply our culinary arts program with farm fresh veggies and herbs from right on campus! I thought that little story might make you smile knowing future generations of grocery shoppers are learning the advantages of going green!
Thank you for what you do for local producers!

Jennifer,
. I wanted to let you know that we make monthly deliveries to Keller in the Farmer’s Market off season. Our next delivery will be Tuesday, November 22nd. Our online is store is pretty well functional right now, but will be fully functional by EOD tomorrow. You will be able to submit an order for the things you would like to pick up right through this website. I hope to see you next Tuesday! Let me know if you have any questions!
Sorry for the late reply. I’m way behind on managing this website on my end. Our wonderful web designer set everything up so perfectly and I relish in her gifts because website management is the thorny bush I prefer to step over
Blessings,
Heather
